There are no vineyards in Paris (except for a few very small vines in Montmartre), so you'll have to get our of Paris. The closest wine regions are probably Burgundy - Chablis being about 1.5 hours from Paris and Champagne (about 2 hours from Paris).
The other option is to rent a car and drive to either of these places and tour on your own while remembering that driving and drinking are a very dangerous mix.

There are tours you can take to visit these: Chablis is part of a 1 day Burgundy discovery tour and Champagne is also a tour you can take from Paris .
