Best area to visit?

Hey!
I'm planning a trip to mFrance (my 3rd one) and I'd like to know if anyone has a good idea of where I can spend a few days (3 or 4) out of the beaten path. I've been to Paris the rivera and the Loire Valley. I know there are a lot of areas of interest outside of these, so I'd like to have your feedback about then. Thanks!
